We left the apartment at 9 am
Headed to the metro station and got off at Maubert Metro stop. We met Sean in front of the Cafe le Metro. We had 10 people in the class. Eric Monteleon, our chef, met us and then took us through the market.
He talked about how to choose fruits and vegetables.
Eric was a very animated guy.
We then walked to the school
First stop was to relax with a cup of coffee, this gave them time to organize and prepare things.
Then we started putting things together with what we bought in the market.
We first made dessert, Creme d'Amande with figs, blueberries and raspberry. when that was cooking we started in on our salad.
We made Salade Nicoise with shrimp.
Apricot glaze for the duck
tarts are done
Here is the duck, some people worked on removing the fat.
Salad stuff is all ready
Making the dressing with mustard, EVOO, red wine vinegar, salt and pepper.
There was quite the process with mixing the ingredients.
Plating the salad. He gave us an example of what ours should look like
We had an assembly line to plate the various vegetables
My salad
Plating the duck, apricot glaze and roasted potatoes.
We had our dessert. We had a couple of slices of cheese between the main course and the dessert
The group
We had disposable aprons. Wrote our names on them, so that he could call on us by name.
Class was over. We were well satisfied. Fun event. We had a stop at the Louvre to see the upside down pyramid. Next stop, home. We had a little mix-up with the Metro but we got it straightened out.
We had a little chance to cool off and put our feet up before going out again.
The class looks fun. Are you going to start cooking duck regularly now?
